{"id":476,"date":"2009-04-29T10:47:08","date_gmt":"2009-04-29T10:47:08","guid":{"rendered":"http:\/\/catchingfireflies.com\/blog\/?p=476"},"modified":"2009-04-29T10:47:08","modified_gmt":"2009-04-29T10:47:08","slug":"delish-baked-penne-dish","status":"publish","type":"post","link":"http:\/\/www.catchingfirefliesgifts.com\/blog\/2009\/04\/delish-baked-penne-dish\/","title":{"rendered":"delish baked penne dish"},"content":{"rendered":"<p><a href=\"http:\/\/catchingfireflies.typepad.com\/.a\/6a00d83451dba369e20115705d0048970b-pi\" style=\"DISPLAY: inline\"><img decoding=\"async\" alt=\"Penne dish\" border=\"0\" class=\"at-xid-6a00d83451dba369e20115705d0048970b \" src=\"http:\/\/catchingfireflies.typepad.com\/.a\/6a00d83451dba369e20115705d0048970b-800wi\" title=\"Penne dish\" \/><\/a>&#0160;<\/p>\n<p>Every Tuesday I make dinner for friends and I always like to try new dishes.&#0160;To get some ideas, I paged through our <a href=\"http:\/\/www.catchingfirefliesgifts.com\/products.php?product=the-six-o%27clock-scramble-recipe-book\" target=\"_blank\">Six O&#39;Clock Scramble cook book<\/a> and this tasty dish caught my eye.<\/p>\n<p>12 ounces penne pasta<\/p>\n<p>1 pound Italian sausage<\/p>\n<p>1 medium onion chopped<\/p>\n<p>1.5 teaspoons minced garlic<\/p>\n<p>1 28oz can diced peeled tomatoes with their juice<\/p>\n<p>1 7oz container of refrigerated prepared pesto sauce<\/p>\n<p>1 6oz bag of baby spinach<\/p>\n<p>8oz shredded mozzarella cheese<\/p>\n<p>1 cup grated Parmesan cheese<\/p>\n<p>Cook the pasta according to the package directions and drain.&#0160; Meanwhile, brown sausage and add onion &amp; garlic (10 minutes)&#0160; Add tomatoes with their juice and simmer until sauce thickens (10 minutes)&#0160; Stir in pesto.<\/p>\n<p>Preheat oven to 375* and spray a 9&#215;13 baking dish with non-stick cooking spray.&#0160; Combine pasta, spinach and mozzarella cheese and 1\/3 cup of the Parmesan cheese in the baking dish.&#0160; Gently stir in the tomato\/meat sauce.&#0160; Sprinkle 2\/3 cup of Parmesan cheese over the casserole.<\/p>\n<p>Bake 30 minutes until sauce bubbles and cheese melts.<\/p>\n<p>Enjoy with garlic bread and favorite salad.<\/p>\n<p><a href=\"http:\/\/catchingfireflies.typepad.com\/.a\/6a00d83451dba369e20115705d07dc970b-pi\" style=\"DISPLAY: inline\"><img decoding=\"async\" alt=\"Scramble\" border=\"0\" class=\"at-xid-6a00d83451dba369e20115705d07dc970b \" src=\"http:\/\/catchingfireflies.typepad.com\/.a\/6a00d83451dba369e20115705d07dc970b-800wi\" title=\"Scramble\" \/><\/a>&#0160;<\/p>\n<p>It&#39;s pretty cool how this book is set up &#8211; there are actually 52 weeks of recipes that are categorized by the season and if you want to make a certain week of recipes, you can even download the grocery list at <a href=\"http:\/\/thescramble.com\/\" target=\"_blank\">thescramble.com<\/a>.&#0160; Even O, Oprah Magazine&#0160;said, &quot;Creative, healthy, unprocessed, and kid friendly without being adult-alienating&#8230; a whole new kind of happy meal.&quot;<\/p>\n<p>I can&#39;t wait to see what else I can cook up with this handy recipe book.<\/p>\n<p><span style=\"COLOR: #cc0000\"><strong><span style=\"COLOR: #663300\">Like to try new&#0160;dishes?&#0160; We love finding &amp; sharing&#0160;scrumptious recipes.
